Single Estate — The Full Expression of Our Terroir.

When you control the entire process—from varietal selection to fermentation protocol to roast curve—you don't hope for complexity. You design it.

The Single Estate plan offers an intimate tour of what our farm can produce. Today that means Sidra and Geisha, both grown on our own land—each cultivated with meticulous agronomy and processed through our proprietary fermentation methods.

We study each lot's terroir, soil characteristics, density, and desired organoleptic profile to design fermentation protocols and roast curves that reveal its full potential. Every variable is considered. Every decision is intentional. This is not an interpretation of great coffee—it's the original.

What a subscription gives you

Early access. Subscribers see each new lot seven days before the shop does, and a few lots a year never reach the shop at all. When a harvest gives us something unusual, you hear about it first and you decide first.

That is the whole benefit, and it is deliberate: the benefit is access, not a discount. We would rather give you the coffee before anyone else than take a few dollars off the same bag everyone can buy.

Frequently Asked Questions

What varieties will I receive?

Varieties from our own land, Sidra, Geisha, Java and Yellow Bourbon among them. Which of them we can ship depends on what each harvest gives us; today the plan runs on Sidra and Geisha. Each is processed to highlight its distinct floral, fruit-forward, or structured character.

How is this different from Everyday?

Everyday is our two blends, which combine our harvest with lots from the families of La Amistad. Single Estate is only coffee grown on our own land—more complex, more expressive, processed with experimental fermentation protocols tailored to each genetic.

Are these competition-grade coffees?

These are exceptional, high-scoring micro-lots (typically 87+ points) featuring rigorous methodology. Many appear in national competitions. Our rarest nano-lots (90+ points), however, are reserved for the Rarities Club.
