Origin & process
An exceptional Geisha lot from our own farm in Zipacón, Cundinamarca, at 1,760 m.a.s.l., released as a numbered edition of 100 g.
Lactic fermentation and drying in our own wet mill.
Roasted at origin in small batches, light medium roast. Every bag shows its roast date.
How to brew
This is a 100 g numbered edition: brew it in small doses.
Filter (V60 or Origami): 12 g of coffee to 200 g of water at 90–91 °C, medium-fine grind, total brew time about 2:45.
Slow, gentle pours. Taste it black, from hot to cool, and take notes: it changes every few minutes.
Keep the bag sealed, away from light and heat. Grind right before brewing.

How should I store it? Sealed, away from light and heat, and ground right before brewing.
